My Version of Valentine’s

Before we kick things off today, I need to make a public service announcement to make you all aware of something in case you have missed the commercials:

Peter Pan, aka, the best Disney movie (including Pocahontas of course) of all time is released from the Disney Vault!

Growing up I’m not sure we ever owned any Disney movies which is incredibly weird (really mom and dad?) but these were, and still are, hands down my favorites!

So if anyone wants to be super duper thoughtful and buy me a Valentine’s day gift…. Smile

CCR is NOT a blog dedicated to documenting what I eat day in and day out, but I do think it’s entertaining to read updates of what others like to eat every once in a while.

Time has been of the essence this week, even considering that however, I have managed to fit in some pretty delicious, quick eats, here is a sampling. Hopefully it gives you some ideas of quick yet yummy weeknight options when prep time is limited.

Tasty Delite 001

I have mentioned Tasty Bite Bombay Potatoes before, but they are my number one go-to, “I have absolutely no time but I need to eat” meal.”  I just tossed in leftover eggplant and chicken, and voila, a 90 second fantastic, flavorful meal!

I am not a fan of pre-packaged meals at all. Normally I find they have NO redeeming qualities. The ingredients usually suck, and the taste usually does not make up for it. These guys are definitely an exception to the rule, check of out the ingredients:

INGREDIENTS
Water, Potatoes, Chickpeas, Tomatoes, Onions, Sunflower Oil, Salt, Ginger, Garlic, Corn Starch, Coriander, Chilies, Cumin, Spices.

Oh! And the best part, they’re sold at Costco… Holla!

This salad was my Friday night, “commute” meal. I often do not get home until after seven on Friday’s due to longer hours and an hour commute (this is perfectly normal for the vast a number of Americans I know) but I am always starving and in need of a quick meal.

Smoked Salmon is one of my indulgences and I had been “saving it” waiting to open the package, because that’s normal right?

Since the expiration date was approaching, it was time to treat myself. I added it to a mix of veggies left over from the week and had an indulgent meal in no time and was able to avoid wasting food, which I cannot stand!

I mean it is Friday night after all there are either friends to see or a few episodes of Say Yes to the Dress calling my name.

How could I mention delicious quick and easy meals and leave out my go-to sammy companion. The perfect marriage of crunch and crust, is given my radishes, bell pepper, carrots, tangy red onion, whatever deli meat and cheese is on sale, and of course lots and lots of mustard!


P.S. Guess who hangs out at Costco besides me…

  1. I am excited for this Valentine’s recipe post to come. Those look mighty tasty!

    I LOVE Tasty Bite simmer sauces and meals! The ingredients lists are fabulous and they are so delicious. I really enjoy the Bombay Potatoes variety, but never thought to add additional veggies/protein. Thanks for the great idea! :)
